I learned how to prepare this refreshing beverage from my friend. I visited her place one summer and she served me this drink. From the first sip, I immediately fell in love with it. I even thought she just bought it outside.
To make the long story short, I made my own version of the smoothie. Yes, I have to admit it. I longed for its rich, coconut-ty flavor. Although it doesn’t exactly taste like my friend’s coconut smoothie, I made sure it tastes even better and healthier, too!
What Makes This Smoothie Oh So Healthy?
The star ingredient of this smoothie is the shredded coconut meat. As an alternative to fresh coco meat, it is economical yet full of essential nutrients. That includes the following:
1. Manganese and Selenium
Shredded coconut meat is rich in minerals, such as manganese and selenium. These two minerals may activate enzymes that our cells need to create a barrier against free radicals and toxins.
2. Iron and Copper
By adding shredded coconut meat to any dishes, you give your body the chance to consume more iron and copper. Both minerals are needed for energy production and metabolism.

- 1 tsp. Chia seeds
- 1 tsp. Coconut extract
- 1 cup canned unsweetened coconut milk
- 2 tbsps. Almond butter
- 4 drops stevia (liquid)
- Strawberries (for added taste)
1. In a blender, combine the frozen coconut milk, coconut milk, chia seeds, coconut extract, almond butter, and stevia.
2. Process the ingredients until they become smooth.
3. Garnish with coconut flakes and strawberries.
