Peach Muffins with Greek Yogurt

Ingredients:

  • ¼ cup non-fat milk
  • ¼ cup + 2 tbsps. melted virgin coconut oil
  • ½ tsp. salt
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • ¾ tsp. cinnamon
  • ¾ cup sugar
  • 1 cup Greek yogurt
  • 1 ½ cup chopped fresh peaches
  • 2 cups all-purpose flour
  • 2 eggs

Procedure:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease a large muffin pan using a baking spray.
  3. In a large bowl, combine the dry ingredients – flour, salt, sugar, baking soda, cinnamon, and baking powder. In another bowl, whisk together the wet ingredients – melted coconut oil, milk, Greek yogurt, and eggs.
